    Vinařství Henri Champliau, založené v roce 2016 Alexandrem Graffardem, vyrábí šumivá vína v srdci Burgundska, přesněji v Mercurey, metodou Charmat neboli Champenoise. Společnost, která nese jméno dědečka zakladatele, velkého milovníka dostihů a vína, pracuje jako negociátor, který osobně vybírá hrozny pro výrobu svých vín, aby byla zaručena nejvyšší kvalita.

    Název vína je poctou vášni Henriho Champliaua pro dostihy a vítězství Petrone v pařížském Longchampu a ve Spojených státech. Víno je směsí odrůd Chardonnay, Colombard a Ugni Blanc. Hrozny kvasí v horizontální nádrži, aby se podpořil kontakt s vinnými kaly a extrakce maximálního aromatického potenciálu. Před uvedením na trh víno zraje 3 měsíce, aby se dosáhlo dokonalé integrace bublinek.

    Víno Cremant de Bourgogne Petrone 68 Blanc de Blancs Brut má živou, průzračnou barvu a jemné, vytrvalé bublinky. Ve vůni se objevují živé vůně žlutého ovoce, zejména jablek a hrušek, a některé citrusové tóny. V chuti je svěží, kulaté a měkké s dlouhým a jemně citrusovým závěrem. Je ideální jako aperitiv, používá se také do koktejlů a dobře se kombinuje s vegetariánskými předkrmy.
